Maryland Crab Cakes

Ingredients:

  • 1 Large Egg
  • 2 1/2 Tablespoons Hellman's Mayonnaise
  • 1 1/2  Dijon mustard
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon Old Bay Seasoning
  • 1/4 teaspoon Salt
  • 1/4 cup finely diced celery (approx 1 stalk)
  • 2 tablespoons finely chopped parsley
  • 1 pound Lump Crab Meat (i justed jumbo - just a preference)
  • 1/2 cup panko
  • Canola Oil
Directions:

  • Line baking sheet with aluminum foil
  • Combine all ingredients in bowl, lightly mix without breaking up too much of the crab meat
  • Shape into 6 crab cakes (about 1/2 cup each) and place on prepared baking sheet.
  • Cover and refrigerate for 1 hour
  • * could make smaller and use for appetizers*

Hoagie Dip

Ingredients:
  • 1/2 pound of Ham
  • 1/4 pound Genoa Salami
  • 1/4 pound of American Cheese
  • 3 Tablespoons of Mayo
  • 2 Tablespoons of Vegetable Oil
  • 1/2 cup Medium Onion (diced)
  • Shredded Lettuce
  • Diced Tomatoes
  • Oregano - To taste
  • Loaf of Italian Bread - Cubed
Instructions:
Cut meat and cheese into small pieces, mix in mayo, oil, oregano and onion.  Allow to sit and absorb the flavors.  Mix in Lettuce and tomato before serving

Serve with cubed Italian bread as a dip

Olive Garden's Smoked Mozzarella Fonduta

Great copycat recipe

Ingredients:
  • 1 loaf Italian Bread, sliced into 1/4 inch slices
  • 1 cup sour cream
  • 1 teaspoon thyme
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon cayenne pepper
  • 3 cups shredded mozzarella cheese
  • 3 cups shredded smoked provolone cheese
  • 3 tablespoons grated Parmesan cheese
  • 3 tablespoons grated Romano cheese
  • 8 teaspoons fresh diced tomatoes (about 2-3 roma tomatoes)
 Instructions:
Preheat oven to 450 degrees
Arrange sliced Italian bread flat on baking sheet and cover with foil.  Set aside until ready to use
Combine sour cream, thyme, red pepper, cayenne pepper and four cheeses in a large bowl and blend thoroughly.
Spray 8x10 inch casserole dish with pam, and then transfer the cheese mixture into casserole dish
Place casserole dish on center rack in oven
After 5 minutes, place baking sheet with bread, still covered, on top rack in oven.  Bake for an additional five minutes.  Remove bread and funduta from oven
Garnish casserole dish with diced tomatoes - arrange bread slices around bowl and serve immediately

Rivera Taco Salad

Ingredients:
  • One pound ground beef
  • One package of Taco Seasoning
  • One head of lettuce - shredded
  • Two cups (eight ounces) shredded cheese
  • Tomatoes - as many as you want
  • One Bag of Doritos - Crushed
  • One Bottle Hidden Valley Ranch Salad Dressing
Instructions:
Brown one pound of ground beef, drain and add taco seasoning to it.   Combine all ingredients together and serve.  If you are taking this to a party keep the ingredients separate until you arrive as things will tend to get soggy if they sit too long.

Buffalo Chicken Dip

2- 8 oz Cream Cheese
1- 8 oz blue Cheese dressing
2 cups chopped cooked shredded chicken (approx 2 large breasts, I use the food processor to shred it)
1- 6-8 oz bottle Frank's Hot Sauce

Melt cream cheese in a sauce pan.
Add the rest of the ingredients.
Pour into baking dish.
Bake for 25 min @ 325*.
